Ingredients
- 16 cups thinly sliced cucumbers
- 1/2 cup course salt
- 6 cups sliced onions
- 2 cauliflower
- Ice cubes
- 4 cups white vinegar
- 5 cups granulated sugar
- 2 tbsp mustard seeds
- 1 tbsp celery seed
- 1 tbsp tumeric
- 1/2 tsp white pepper
Preparation
Step 1
Combine cucumbers, salt, onions and cauliflower. Mix in ice cubes to cover and let stand for 2-3 hours, or until cucumbers are crisp and cold. Add more ice cubes as needed.
Drain and wash thoroughly.
In a large kettle combine sugar, vinegar, celery seed, tumeric, white pepper and mustard seed. Bring to a boil for 10 minutes. Add sliced vegetable mixture and bring to a boil. Pack at once into hot sterilized jars and seal. Store in a cool place 1 month before using.
