Lemon Bread

Ingredients

  • 1 large lemon
  • 1 1/2 c all purpose flour
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 1/2 c vegetable oil
  • 1 c plus 2 tbsp sugar
  • 2 large eggs
  • 1/2 c whole milk
  • 1/2 c chopped walnuts (optional)

Preparation

Step 1

Preheat oven to 350 degrees and with nonstick spary, spray 3 metel mini loaf pans.

From lemon, grate 1 tbsp zest, and squeeze 3 tbsp juice. Mix flour, baking powder, and salt set aside. In a bowl, with mixer on high speed, beat oil, and 1 c sugar for 2 min or until well blended. Beat in eggs, and lemon zest. At low speed, beat in flour mixture until combined. Beat in milk and nuts.

Spoon batter into loaf pans. Bake 45-50 minutes.
In a small bowl, mix lemon juice and 2 tbsp sugar. Remove bread from the oven, and poke holes all over the top of the loaves, using a skewer. Brush on the sugar mixture. Cool in pans on wire rack for 10 min. Remove from pans and cool completely.
