Ingredients
- 2 env. (1/4 oz each) unflavored gelatin
- 2 TBS sugar
- 2 cups lemon-lime soda
- 1 1/4 cups boiling water
- 2 pkg (3 oz each) raspberry flavored gelatin
- 1/4 cukp cold water
- 36 fresh raspberries (about 1 1/3 cups)
Preparation
Step 1
1) Mix unflavored gelatin and sugar in med microwaveable bowl until blended. Stir in soda. Let stand 3 mins or until gelatin is softened. Microwave on high 3 mins or until gelatin and sugar are dissolved, stirring after each minute. Pour into 8-inch square dish sprayed with cooking spray.
2) Refrigerate 25 – 30 mins or until set, but not firm. Meanwhile, add boiling water to raspberry gelatin mixes in separate med bowl; stir 2 mins until completely dissolved. Stir in cold water. Cool 15 mins.
3) Pour raspberry gelatin gently over clear gelatin layer in dish. Refrigerate 1 hr or until firm. Cut into 36 squares; top with raspberries just before serving.
