Strawberry & Ricotta on Graham Crackers

This dish is inspired by a recipe from Food and Wine magazine. This is the easy and quick recipe for a nice sweet appetizer or dessert.

Ingredients

  • 1 sleeve of graham crackers, divided
  • 1 package strawberries, sliced
  • 1/3 c sugar
  • 1 1/2 tbs lemon juice
  • 10 oz ricotta
  • 2 tbs confectioners' sugar
  • 1 tsp lemon zest

Preparation

Step 1

In a bowl, toss the strawberries with sugar and lemon juice. Let stand until looks syrupy, about 20 mins.
In another bowl, mix the ricotta, confectioner's sugar and lemon zest.
Spread 1 tsp on cracker and top with strawberries. Drizzle with the syrup and serve.
