Corn Pudding

Ingredients

  • 3 eggs, beaten lightly
  • 1 pint whole milk
  • 1 TBSP. plus 1 tsp. sugar
  • 1 tsp. salt
  • 1 TBSP. plus 1 tsp. butter or margarine, melted
  • 3/4 cup corn, cut from the cob (1 1/2 ears), or canned or frozen
  • Chopped green chili to taste (optional)
  • Chopped onion to taste{optional)
  • Grated cheese to taste (optional)
  • Paprika to taste (optional)

Preparation

Step 1

Preheat oven to 450 degrees. Grease a glass baking dish. Combine eggs, milk, sugar, salt, butter and corn in the prepared dish. Place in a shallow pan of warm water. Bake for 45 minutes. To serve, sprinkle with green chilies, onion, cheese and paprika.
