Ingredients
- 1 red onion, chopped
- 1 green bell pepper, copped
- 1 tsp salt
- 1/2 tsp pepper
- 2 Tbsp olive oil
- 8 large eggs, beaten
- 3 oz grated cheddar cheese (3/4 cup)
- 1 cup halved cherry tomatoes
- 1/3 cup chopped parsley leaves
- Crusty bread
Preparation
Step 1
Cook 1 each chopped red onion and bell pepper with 1 tsp salt and 1/2 tsp pepper in 2 Tbsp olive oil in a large nonstick skillet over medium heat, stirring occasionally, until very tender, 12 to 14 minutes.
Add 8 beaten large eggs and cook stirring frequently, until the eggs are just set, 1 to 2 minutes.
Add 3 oz grated cheddar cheese, stirring, until just melted, 1 to 2 minutes more.
Remove from heat. Stir in 1 cup halved cherry tomatoes and 1/3 cup chopped parsley leaves.
Serve with crusty bread drizzled with olive oil.
