Ingredients

    red onion, chopped

  • 1

    green bell pepper, copped

  • 1

    tsp salt

  • 1/2

    tsp pepper

  • 2

    Tbsp olive oil

  • 8

    large eggs, beaten

  • 3

    oz grated cheddar cheese (3/4 cup)

  • 1

    cup halved cherry tomatoes

  • 1/3

    cup chopped parsley leaves

  • Crusty bread

Directions

Cook 1 each chopped red onion and bell pepper with 1 tsp salt and 1/2 tsp pepper in 2 Tbsp olive oil in a large nonstick skillet over medium heat, stirring occasionally, until very tender, 12 to 14 minutes. Add 8 beaten large eggs and cook stirring frequently, until the eggs are just set, 1 to 2 minutes. Add 3 oz grated cheddar cheese, stirring, until just melted, 1 to 2 minutes more. Remove from heat. Stir in 1 cup halved cherry tomatoes and 1/3 cup chopped parsley leaves. Serve with crusty bread drizzled with olive oil.
