Glazed Salmon Bacon Sandwich

This recipe is from food and wine magazine. A different way to serve salmon and very tasty. Bacon adds a nice twist.

Ingredients
- 4 salmon fillets, skinless
- 1/4 c dijon mustard, plus 2 tbs
- 1/4 c horseradish
- 2 tbs honey
- evoo for rubbing
- salt and black pepper
- 4 kaiser rolls, toasted and buttered
- 8 slices bacon, cooked until crisp
- 1/2 granny smith apple, cut into 12 thin slices
Preparation
Step 1
Prepare the grill and light. In a small bowl, mix the mustard, horseradish and honey. Rub the salmon w/oil and season with salt and pepper.
Grill the salmon over moderate heat, until lightly browned, about 3 mins.
Turn and grill for 3 mins longer, until the salmon is almost cooked through. Turn the salmon over again and spread each fillet with 1 tbs horseradish glaze. Turn and grill until glazed, about 30 seconds.
Spread the remaining horseradish glaze on the rolls. Place a lettuce leaf, 2 crispy bacon strips and 3 slices of apples on each roll. Place a salmon on top. Close the sandwich and serve.
