Tomato Fritters

Ingredients

  • 1 c. flour
  • 1 tsp. baking powder
  • 1 tsp. sugar
  • 3/4 tsp. slat
  • 1/4 tsp. basil
  • 1 28 oz. can tomatoes (drained)
  • 1 t finely minced onion
  • 1 T parsley
  • 1/2 tsp. Worcestershire sauce
  • 2 eggs
  • oil for frying

Preparation

Step 1

In large bowl combine flour, baking powder, sugar, salt and basil. Cut tomatoes into 1/2 inch pieces and drain of paper towels. Add them along with onion, parsley, and Worcestershire sauce to flour mixture but do not mix. IN small bowl beat eggs and add to flour/tomato mixture.

In skillet heat oil and drop batter by tablespoons patting them down with back of spoon. Fry until golden on one side and turn over to fry other side. Keep warm in oven until ready to serve.
