Green Beans Provencale

Ingredients

  • 2 lbs fresh green beans
  • 2 pints cherry tomatoes halved
  • 1/2 red onion chopped
  • 1 tbsp dried parsley
  • 1/4 c water
  • 1/4 c white wine vinegar
  • 2 tbsp pramesan cheese grated
  • 2 tbsp olive oil
  • 1/2 tsp dried thyme
  • 1/2 tsp pepper
  • 2 cloves garlic minced

Preparation

Step 1

Cook green beans until crisp tender, drain and put in ice water, drain when cooled.

Combine beans, tomatoes, onion, in a bowl. Combine the water, vinegar,parsley, cheese, olive oil, thyme, pepper and garlic until well blended. Pour over the vegetables and toss gently to coat.

Serve at room temperature.
