Ingredients
- 6 lbs. zucchini
- 1 XL Vidalia onion
- 5 cans stewed tomatoes Italian Style (14.50z.)
- 1 clove of garlic (or garlic powder to taste)
- 1 tbsp Parsley (to taste)
- pinch of hot pepper (to taste)
- Olive oil to cover the bottom of the pot.
Preparation
Step 1
Cover the bottom of the pot with olive oil. Cut up zucchini and onion and add to pot. Cook until tender (translucent). Add tomatoes and herbs. Let simmer for 1-1/2 hours or more. Serve in bowl over pasta, rice etc.
