Zucchini Stew

6 lbs. zucchini
1 XL Vidalia onion
5 cans stewed tomatoes Italian Style (14.50z.)

Ingredients

  • 6 lbs. zucchini
  • 1 XL Vidalia onion
  • 5 cans stewed tomatoes Italian Style (14.50z.)
  • 1 clove of garlic (or garlic powder to taste)
  • 1 tbsp Parsley (to taste)
  • pinch of hot pepper (to taste)
  • Olive oil to cover the bottom of the pot.

Preparation

Step 1

Cover the bottom of the pot with olive oil. Cut up zucchini and onion and add to pot. Cook until tender (translucent). Add tomatoes and herbs. Let simmer for 1-1/2 hours or more. Serve in bowl over pasta, rice etc.
