Beet, Pear & Feta cold side salad

Ingredients

• Lemon Oil Dressing:
• 4 beets
• 3 ripe pears
• juice of 1 lemon, + 10 Tbsp. EVOO
• 7 oz feta cheese

Preparation

Step 1

Peel & cut beets and pears into fine matchsticks.

Dress in Lemon oil dressing.

Season w/sea salt & freshly ground black pepper.

Crumble 7 oz feta cheese on top.

Sprinkle w/small mint leaves.
