Braised Short Ribs with Soy, Honey and Stout

This is a great recipe that was found online. It was served for a tapas' style party and was a hit. This recipe is a keeper and has been modified slightly. The meat is very tender. This recipe serves 2 but can be multiplied for more servings.

Ingredients

  • 1 tbs evoo
  • 2 lbs short ribs
  • 1 small yellow onion,diced
  • 3 garlic minced
  • 1 12 oz stout beer
  • 1 c broth, beef
  • 1/4 cu amber honey
  • 2 tbs dark soy sauce

Preparation

Step 1

Preheat oven to 350 degrees. Heat 1 tbs of evoo in medium dutch oven over medium-high heat. Season with ribs with salt and pepper. Brown ribs on each side, about 2 mins per side. Set aside. Drain the fat, leaving a little bit.
Place heat heat on medium-low and add onions. Saute until translucent, about 5 mins. Add garlic and cook for about 2 mins. Stir in beer, stock, honey and soy. Bring to a simmer, cover and cook in the oven for 2 to 2 1/2 hours, until meat is tender. but not falling off the bone. Remove the ribs to a platter. Spoon some of the oil off the top and taste the sauce for seasoning. Poor the sauce over the ribs, and serve.
