Ingredients
- 8 boneless chicken breasts, cut thin
- 2 c. sliced mushrooms
- 1 small onion, chopped
- 1/2 c. flour
- 2 tsp. poultry seasoning
- 2 tsp. butter
- 1 1/2 Tbs. olive oil
- 1/4 c. Marsala wine
- 1 Tbs. fresh rosemary or 1 tsp. dried rosemary
- 4 slices mozzarella cheese
Preparation
Step 1
Lightly season chicken with salt and pepper. Mix poultry seasoning and flour. Dredge chicken. Melt butter and olive oil in large skillet. Add chicken to skillet and cook 5-6 minutes. Remove. Add wine and stir to deglaze. Add mushrooms, onions and rosemary. Saute for 5 min. over high heat. Return chicken to skillet and top each with cheese. Cook until cheese melts.
