Drunken Shrimp

Ingredients

  • 12 1arge shrimp, deaned and pee led
  • 1/2 cup dark rum
  • 1 sprig rosemary
  • 1 clove garlic minced
  • 1/2 cup of chopped cilantro, chives or basil
  • 1 heaping tablespoon sweet chilli sauce
  • 12 slices prosciutto
  • 2 limes cut into wedges
  • 2 cups plain yogurt

Preparation

Step 1

In a large bowl, mix the rum, rosemary, sweet chili, garlic and chives. sdd the shrimp and marinate for 2-4 hours. REmove shrimp and wrap the prosciutto around each shrimp. Put 3 - shrimp on a single skewer. Grill for about 2 mins each side or until pink.
