Chinese Chicken

Ingredients

  • 1 whole fryer (Chicken pieces work, also. They can be baked in the oven.)
  • 1/2 T oil
  • 2/3 c soy sauce
  • 2/3 c brown sugar
  • 1 c water
  • 2 T ketchup
  • 1/2 c apple juice
  • 1 t crushed red pepper
  • 2 garlic clove, pressed
  • 2 green onion sliced, or a similar amount of other onion
  • 4-6 T cornstarch
  • 4 T water
  • rice

Preparation

Step 1

Brown fryer in oil.

Mix together soy sauce, brown sugar, water, ketchup, apple juice, crushed red pepper, garlic, and green onion.

Pour some sauce over chicken in large pot. Cover and simmer 45-50 minutes.

Bring remaining sauce to a boil.
Blend 4-6 T cornstarch and 4 T water. Stir into sauce and cook until thickened.

Serve with chicken and rice.
