Mango Marmalade Chicken Sliders

Ingredients

  • 2 lb LB. CHICKEN BREASTS
  • 1 TSP. GARLIC POWDER
  • l C. chicken BROTH
  • 1 TSP. SALT
  • 13 1/2 OZ. JAR MANGO-PEPPER JELLY
  • 1/2 TSP PEPPER
  • 1/2 c. MARMALADE
  • 1 C. SOUR CREAM
  • 1/4 C. VINEGAR
  • 1-16 oz. package coleslaw mix
  • 1 TSP. CUMIN
  • 2/3 C. MAYO
  • 1 TSP. PAPRIKA
  • HOT SAUCE TO TASTE

Preparation

Step 1



Combine chicken, broth, jelly, marmalade, vinegar, cumin, paprika, garlic powder, salt and pepper.
Bring to a simmer, then cook uncovered for 45 min.
Transfer chicken to cutting board.
Continue cooking the sauce for another I a min or until considerably reduced and thickened.
Meanwhile, use 2 forks to pull apart and shred the chicken.
Once the liquid has reduced, return the chicken to the saucepan and mix with sauce.
Simmer until heated through, then remove the pan from the heat.
Stir in sour cream.
In a medium bowl, mix together coleslaw mix, mayonnaise and hot sauce.
Serve on buns topped with coleslaw.
