Hawaiian Chicken

Ingredients

  • 1/4 c pineapple juice
  • 2 T ketchup
  • 2 T soy sauce
  • 1 1/2 tsp minced peeled ginger
  • 2 garlic clove, minced
  • 4 boneless, skinless chicken breasts
  • 2 c hot cooked rice

Preparation

Step 1

Combine first 5 ingredients. Reserve 1/4 cup marinade; place remaining marinade in plastic bag with chicken. Chill 4 hrs.
Heat grill. Grill chicken basting with reserved marinade 6 minutes; turn, basting again and grilling 6 minutes.
Serve with hot rice.
