Ingredients
- 3 Tbs hoisin sauce
- 1 Tbs honey
- 1 Tbs freshly squeezed lime juice
- 2 Tbs canola oil, divided
- 1 lb chicken breast cutlets
- 3 C cooked rice
Preparation
Step 1
In a small bowl whisk together hoisin sauce, honey, lime juice, and 1 Tbs oil.
Remove 1/4 cup of the glaze to another small bowl, set aside. Lightly brush both sides of the chicken cutlets with the remaining hoisin sauce.
Heat the remaining 1 Tbs oil in a 12 inch skillet over medium-high heat. Place chicken cutlets in the pan in a single layer so the pieces don't touch. Cook the cutlets for 2-3 minutes per side, depending on the thickness. The cutlets should be glossy brown and cooked through.
Slice the chicken cutlets and serve over rice. Drizzle with reserved hoisin sauce.
