Ingredients

    Tbs hoisin sauce

  • 1

    Tbs honey

  • 1

    Tbs freshly squeezed lime juice

  • 2

    Tbs canola oil, divided

  • 1

    lb chicken breast cutlets

  • 3

    C cooked rice

Directions

In a small bowl whisk together hoisin sauce, honey, lime juice, and 1 Tbs oil. Remove 1/4 cup of the glaze to another small bowl, set aside. Lightly brush both sides of the chicken cutlets with the remaining hoisin sauce. Heat the remaining 1 Tbs oil in a 12 inch skillet over medium-high heat. Place chicken cutlets in the pan in a single layer so the pieces don't touch. Cook the cutlets for 2-3 minutes per side, depending on the thickness. The cutlets should be glossy brown and cooked through. Slice the chicken cutlets and serve over rice. Drizzle with reserved hoisin sauce.
