Ingredients
- 2 c. flour
- 1 c. sugar
- 1 1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 3/4 c. orangejuice
- 2 tbsp oil
- 1 tbsp grated orange peel
- 1 egg, well beaten
- 1 1/2 c, fresh or frozen cranberries, coarsely chopped
- 1/2 c. chopped nuts
Preparation
Step 1
Preheat oven to 350 degrees. Grease a 9 x 5 loaf pan. Mix together flour, sugar, baking powder,salt and baking soda. In another bowl, mix orange juice, oil, orange peel and egg. Mix until well blended. Stir in cranberry mixture. Spread evenly in pan. Bake for 50 to 55 min or until a toothpick inserted in center comes out clean. Cool on wire rack for 15 min. before removing from pan. Cool completely
