Quinoa Summer salad

Off the quinoa bag from Sam's Club

Ingredients

  • 2 C Vegetable or Chicken broth
  • 1 C Quinoa
  • 4 C Combined vegetables or fruit: tomatoes, cucumber, broccoli, pea pods, whatever
  • 1/2 large red onion, finely minced
  • 3 Tbsp fresh lemon juice (must be from a lemon)
  • 4 Tbsp extra virgin olive oil
  • 1 Tbsp sesame oil
  • 3 Tbsp slivered almonds toasted
  • 1/2 cup finely chopped cilantro or parsley
  • Salt and pepper to taste

Preparation

Step 1

Cook quinoa and allow to cool, In a large bowl, combine the vegetables and dressing ingredients as well as salt and pepper to taste. Toss the cooled quinoa, almonds and cilantro and adjust seasonings and dressing to suit.
