Ingredients
- 2 C Vegetable or Chicken broth
- 1 C Quinoa
- 4 C Combined vegetables or fruit: tomatoes, cucumber, broccoli, pea pods, whatever
- 1/2 large red onion, finely minced
- 3 Tbsp fresh lemon juice (must be from a lemon)
- 4 Tbsp extra virgin olive oil
- 1 Tbsp sesame oil
- 3 Tbsp slivered almonds toasted
- 1/2 cup finely chopped cilantro or parsley
- Salt and pepper to taste

Step 1
Cook quinoa and allow to cool, In a large bowl, combine the vegetables and dressing ingredients as well as salt and pepper to taste. Toss the cooled quinoa, almonds and cilantro and adjust seasonings and dressing to suit.
