Cheese Grits

Ingredients

  • 1 cup 3 minute grits
  • 1 stick margarine/butter
  • 3 eggs at room temperature
  • 1 tube Kraft jalapeno cheese (substitute 1/2 block Velveeta Mexican cheese cut in cubes to melt better)

Preparation

Step 1

1. Make grits first. Pour 1 cup 3 minute grits into 4 cups boiling water. Add 1/2 teaspoon salt. Cook and cover according to directions of grits box.
2. Put cooked grits in stainless mixer bowl.
3. Add 1 stick margarine, 3 eggs and 1/2 box Velveeta Mexican cheese.
4. Stir with mixer on slow speed until all ingredients are mixed.
5. Cook in 13 x 9" buttered Pyrex dish at 350 degrees for 45 minutes.
