Ingredients
- For poppers:
- 1 3/4 cup whole wheat pastry flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/3 cup apple sauce + 2 tablespoons oil
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cup pumpkin puree
- 1/2 cup milk
- For coating:
- 1 stick of unsalted butter, melted
- 2/3 cup granulated sugar
- 2 tsp cinnamon
Preparation
Step 1
Preheat oven to 350 degrees and prepare mini muffin pans (will make 30-36).
Whisk together dry ingredients in a large bowl.
In a separate bowl, mix together the applesauce and oil, egg, vanilla, pumpkin and milk.
Pour the dry ingredients into the wet ingredients and mix gently until combined.
Fill mini muffin cups 3/4 full and bake for 10-12 minutes.
While the poppers are baking, melt butter in one bowl and combine sugar and cinnamon in another.
Let the poppers cool, then dip in melted butter. Roll immediately in sugar cinnamon mixture.
