Banana Loaf

Ingredients

  • Optional:
  • 125 grams butter (4 1/2 tbsp)
  • 2 eggs
  • 2 c white flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 c sugar
  • 2-3 ripe bananas, chopped
  • 1/2 c chopped walnuts, dried cranberries or sliced almonds.

Preparation

Step 1

In food processor, mix softened butter and sugar until light and fluffy. Add eggs and bananas and mix thoroughly. Mix in sifted flour, baking powder, baking soda and pulse to mix. Do not over-mix.

Bake at 180 degrees C (~355 degrees F) for 30-40 minutes. Reduce time for muffins.

Great with lemon icing or cream cheese frosting.
