Artichoke/Shrimp/Tortellini Salad

Ingredients

  • Salad:
  • 1 jar (14 oz.) artichoke hearts drained
  • 16 oz cheese filled tortellini (adjust for preference; I use 8 oz)
  • 1 lb medium shrimp
  • 1 c sliced Italian black olives
  • Dressing:
  • 3 T lemon juice
  • 3 T white wine
  • 1 tsp Dijon mustard
  • 3 T fresh or 1 T dried parsley
  • 1 tsp salt
  • 3 garlic cloves, crushed
  • 1 T ground cumin
  • 1/2 tsp white pepper
  • 1/8 tsp cayenne pepper

Preparation

Step 1

Cook tortellini according to package directions, adding shrimp for the last 3 minutes. Rinse. Cut artichokes into quarters. Add to tortellini and shrimp along with olives. Combine dressing ingredients and add to salad. Chill for one hour.
