Praline Squash Recipe

Ingredients

  • 3 lb. butternut squash, peeled, seeded and cut into 1-inch chunks
  • 3 eggs, lightly beaten
  • 1/4 tsp nutmeg
  • salt and pepper to taste
  • 1/2 cup dark brown sugar, packed
  • 3/4 cup pecans, coarsely chopped
  • 3 Tbs butter

Preparation

Step 1

Boil squash in salted water, about 20 minutes or until tender. Drain and puree squash. Add eggs, nutmeg, salt and pepper. Pour into casserole.
Sprinkle with brown sugar and nuts. Cut up butter anddrop over the top.
Bake at 375 degrees for 1/2 hour or until bubbly.
