Citrus Cure for Salmon

Ingredients

  • 1 lb. salt
  • 1 lb. sugar
  • lemon zest from 2-3 lemons
  • lime zest from 2-3 limes
  • 3 stalks lemon grass

Preparation

Step 1

Peel lemons and limes. Remove outer layer of lemon grass, chop coarsely. Place rind of lemons, limes and lemon grass in food processor with salt and sugar, process till moist and well incorporated.
