Ingredients
- 2 lbs asparagus
- 2 TBSP extra virgin olive oil
- 2 TBSP balsamic vinegar
- 1/2 TSP salt
- 1/4 TSP ground pepper
- 1/4 cup shredded asiago cheese
- 2 TBSP chopped kalamata olives
Preparation
Step 1
preheat oven to 400
trim asparagus and spread evenly in large roasting pan and drizzle with oil vinegar and salt and pepper
toss to coat well
roast for 8 to 10 minutes turning once until just tender crisp
top with cheese and roast2 minutes longer until melted
remove and sprinkle with olives
