Ingredients
- 1 Can (15oz) Tropical Fruit
- 2 C Prepared Baking Mix
- 14 C Apple Juice
- 1/4 C Coconut Flake
Preparation
Step 1
Drain tropical fruit reserving 1/4 C syrup. Finely dice the fruit. Combine the baking mix, apple juice, reserved syrup and diced fruit in a large bowl. Mix until all ingredients are well combined.
Lightly grease muffin cups and spoon mixture into the muffin cups. Sprinkle the tops with coconut and sugar.
Bake @ 350 for 12-15 minutes.
