POTATO LATKES (PANCAKES)

Ingredients

  • 1 egg
  • 1 sm onion cut in quarters
  • 2 Tbsp flour
  • 1/2 tsp salt
  • 1 dash(es) peper
  • 1 c vegatable or olive oil
  • 3 md peeled potatoes, cubed

Preparation

Step 1


1. In blender with metal blades, add first 5 ingredients, mix until smooth.
2. Add potatoes and mix till fairly smooth.
3. In large skillet, heat oil until almost smoking. Drop into oil 1/3 cup full of mix & gently flatten each mound into a 4 inch circle. Cook until golden brown, turning when necessary.
