Cream Of Mushroom Soup

Ingredients

  • 6 tablespoon(s) butter
  • 1 medium onion, finely chopped
  • 1 pound fresh mushrooms, sliced
  • 3 tablespoon(s) flour
  • 3 + cup(s) beef stock
  • 1 bay leaf
  • 1/8 teaspoon(s) freshly ground pepper
  • 3/4 cup fat free half-and-half
  • 4 moralles
  • 1 1/2 cups water

Preparation

Step 1

1) Soak moralles overnight, rinse carefully, cut apart and clean them. Save water, add flour to moralles water.

2) Melt the butter in a heavy pan. Add the onions and stir over moderate heat until onions are transparent. Add the mushrooms and cook, stirring, another 4 minutes.

3) Remove the mixture from the heat and blend in the flour. Add the stock slowly, stirring constantly. Add the bay leaf and pepper.

4) Bring the mixture to a boil, reduce heat and simmer 5 minutes. Remove the bay leaf and stir in the cream. Puree all. If desired, garnish with croutons just before serving.
