Chicken Fettuccine Alfredo

Ingredients

  • 6 oz uncooked fettuccine
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 small onion chopped
  • 2 garlic cloves , minced
  • 1/2 tsp salt
  • 1/8 tsp cayenne pepper
  • 1 tbsp butter
  • 1 1/2 tbsp flour
  • 1 3/4 c. fat free half and half
  • 1 c. frozen peas, thawed
  • 1/4 c, parmesan cheese, grated

Preparation

Step 1

Cook fettuccine according to pkg directions. In a large skillet, saute the chicken, onion, garlic, salt and cayenne in butter until chicken is no longer pink. Stir in flour and blend. Slowly add the half and half , peas and cheese. Bring to a boil, cook and stir for 1 to 2 min. or until thickened. Drain Fettuccine, toss with chicken mixture.
