Butch Herms’ Irish Potatoes

Ingredients

  • 1 pound of 10X sugar
  • 1/2 cup of light corn syrup
  • 4 tablespoons butter
  • 1 tablespoon vanilla extract
  • 1 cup coconut
  • Cinnamon

Preparation

Step 1

Mix first five ingredients together until smooth. Refrigerate overnight.

Next day, roll into balls and roll in cinnamon.

Best to keep cool.
