Ingredients
- 1 regular size foil oven bag
- Cooking spray
- 1/2 cup uncooked orzo
- 2 teas. Olive oil (divided use)
- 1 cup diced tomatoes
- 3/4 cup sliced green onions
- 1/2 cup crumbled feta
- 1/2 teaspoon grated lemon rind and 1Tbs. fresh lemon juice
- 1/4 teas. Salt and 1/4 teas. Black pepper
- 3/4 pound large raw shrimp
- 1/4 cup chopped fresh basil
Preparation
Step 1
Preheat oven to 450. Coat inside of bag with cooking spray and place on large shallow pan. Cook pasta five minutes (omitting fat and salt). Place pasta in large bowl, add 1tsp. olive oil and next 7 ingredients. Place orzo mixture in bag, combine basil and shrimp and arrange on top of orzo. Fold edge of bag to seal. Bake 25 min. or until shrimp is done. Cut open bag, peel back edge and drizzle 1 tsp oil over. Serves 2.
***I find that this is more like serving 3. I kind of double it and add more shrimp for 6. I serve it on a big white platter garnished with fresh basil leaves. Altho it looks pretty to have the tails on the shrimp I think it works better with the tails removed.
*** If you cannot find foil oven bags in the store, and I cannot, just make a large envelop from heavy duty foil and seal tightly.
