Ingredients
- 1 (16 oz) can peaches in juice
- 4 plum tomatoes
- 4 green onions
- 2 Tbsp chopped pickled Jalapeno peppers
- 1 Tbsp finely chopped fresh cilantro
- 1 Tbsp olive oil
- 1 Tbsp lime juice
- 1 Tsp honey
- 1/4 Tsp salt
- 1/4 Tsp pepper
Preparation
Step 1
Drain peaches. Chop peaches, tomatoes and green onions; place in a large bowl. Add remaining ingredients, stirring gently. Refrigerate up to 3 days. Yield: 3 cups
