Peach Salsa

Ingredients

  • 1 (16 oz) can peaches in juice
  • 4 plum tomatoes
  • 4 green onions
  • 2 Tbsp chopped pickled Jalapeno peppers
  • 1 Tbsp finely chopped fresh cilantro
  • 1 Tbsp olive oil
  • 1 Tbsp lime juice
  • 1 Tsp honey
  • 1/4 Tsp salt
  • 1/4 Tsp pepper

Preparation

Step 1

Drain peaches. Chop peaches, tomatoes and green onions; place in a large bowl. Add remaining ingredients, stirring gently. Refrigerate up to 3 days. Yield: 3 cups
