Pumpkin Roll

Ingredients

  • roll:
  • 3 eggs
  • 1 c. sugar
  • 2/3 c. canned pumpkin
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 3/4 c. flour
  • filling:
  • 8 oz. cream cheese
  • 4 tbsp. butter
  • 1 c. confectioners sugar
  • 1/2 tsp. vanilla extract

Preparation

Step 1

1. beat together 3 eggs and 1c. sugar. add pumpkin, baking soda, cinnamon, and flour.
2. grease pan and spread mixture into jelly pan or cookie sheet with sides. bake 15 min at 375F.
3. as soon as it comes out of the oven turn upside down on wax paper. Roll it up with wax paper in the roll. Cool about 45 min. Meanwhile, prepare filling. open, then spread with filling.
4. refrigerate
