Ingredients
- 10.5 oz Soba Noodles
- 1 baby Bok Choy
- 1/2 cup Peanut Butter
- 5 Tablespoons toasted sesame oil
- 3 tablespoons soy sauce
- 1/4 Rice wine vinegar
- 1 large Garlic clove
- 2 teaspoons sugar
- 1/2 teaspoon red pepper flakes
- Sesame seeds - garnish
Preparation
Step 1
1.Cook soba noodles according to package directions. Drain; let cool completely
2. Bring 3 cops water to a boil in med saucepan; boil boy choy for 30 secs. Drain, rinse well. Let cool. Chop coarsely.
3. Whisk together peanut butter, oil, soy sauce, vinegar, garlic, sugar and red pepper flakes. Put sauce, noodles, and boy choy in a bowl; toss well. Sprinkle with seeds. Refrigerate in an airtight container until ready to serve, up to 2 days
