Pasta Margherita

A beautiful dish; very light & fresh!

Ingredients

  • 8 oz. Dry Pasta
  • 3 C. Fresh Tomatoes, diced
  • 1/2 lb. Fresh Mozzarella, diced
  • Salt & Pepper To Taste
  • 1/4 C. Olive Oil
  • 1 Tbsp. Garlic, thinly sliced
  • 1/2 C. Fresh Basil Leaves, thinly sliced

Preparation

Step 1

Cook pasta in boiling, salted water till al dente ( approx. 6-8 min. ); drain. Meanwhile, combine tomatoes & mozzarella in a lg. bowl. Season with salt & pepper, then add the drained pasta. Saute garlic in oil in a lg. saute pan for 1 min, or till fragrant ( do not brown ). Pour over the pasta mixture & toss to combine. Garnish with fresh basil. Serve.
