Ingredients
- 1 T. butter
- 1/2 cup sliced almonds
- 1/4 cup sugar
- 1 head red leaf lettuce - rinsed, dried and torn
- 1/4 c. green onions, chopped
- 1/4 (1/2 cup) chopped celery
- 2 (11 ounce) cans mandarin orange segments, drained
- 1/4 (1/2) cup vegetable oil
- 2 T. (1/4) cup cider vinegar
- 2 T. (1/4) cup white sugar
- 1/4 t. (1/2) almond extract (optional)
- 1/4 teaspoon salt
Preparation
Step 1
Lightly saute almonds in 1 T. butter and 1/4 c. sugar.
Mix greens, oranges, celery & onions and add almonds.
Mix remaining ingredients for the dressing.
Toss before serving.
