Ingredients
- Butter for greasing pan
- 2 T extra virgin olive oil
- 2 3 or 4 ounce sweet or spicy italian linked sausage, casings removed
- 2 cloves minced Gallic
- 1 cup shredded smoked mozzarella 4 ounces
- 4 large eggs room temp
- 2 cups milk room temp
- 11/2 cups flour
- 3 T basil chopped
- 1 1/2 t salt
- 1/2 t pepper
Preparation
Step 1
Preheat oven 400
Heat oil over med heat, add sausage, break apart, cook about 6 min. Add garlic . Spoon ant. 1 1/2 T sausage into each muffin cup. Sprinkle with cheese on top of sausage. Blend eggs until frothy, add flour, milk, basil,s & p until just incorporated , pour into muffin cups filling just below rim. Bake without opening the oven door until puffed and golden, about 35 minutes.
Drizzle w/maple syrup
