GINGERBREAD CAKE/MUFFINS

Ingredients

  • 1 1/2 c. flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp cinnamon
  • 1/2 tsp ground cloves
  • 2 tsp flaxseed (my addition for nutrition)
  • 3 tsp ground ginger (try more for a more spicy flavor)
  • 1/4 tsp ground nutmeg
  • 1/4 tsp 5-spice powder (optional)
  • 1/4 c. brown sugar
  • 1/4 c. white sugar
  • 1/4 c. molasses
  • 3 Tbsp plain, low fat vanilla yogurt
  • 3 Tbsp canola oil
  • 1 egg
  • 1/2 c. boiling water

Preparation

Step 1

1. Mix dry ingredients and spices. Whisk.

2. Add brown sugar, white sugar, molasses, yogurt, vegetable oil and 1 beaten egg. Take whisk and stir together.

3. Add boiling water until it is a smooth, shiny batter.

4. Add to greased and floured 8 or 9 inch baking pan or 1 dozen muffin pan.

5. Tap pan to remove bubbles.

6. Bake in the preheated 350 degree oven until a toothpick inserted into the center comes out clean, about 35 minutes.
