Ingredients
- 1/4 cup flour
- 1/2 tsp salt
- 1/2 tsp dried oregano
- 1/4 tsp pepper
- 4 Tsp butter
- 4 skinless, boneless chicken breasts, pounded 1/4 inch thick (about 1-1/2 lb)
- 4 Tsp olive oil
- 1-2 cup sliced mushrooms
- 1/2 cup Marsala wine
- 1/4 sup cooking sherry or chicken broth
Preparation
Step 1
1. Mix together flour, salt, oregano, & pepper. Coat chicken in mixture.
2. In large skillet, melt butter in oil over medium heat.
3. Place chicken in pan & lightly brown. Turn over chicken & add mushrooms.
4. Pour in wine & sherry.
5. Cover skillet & simmer 10 minutes, turning chicken once.
6. After chicken is pink & juices run clear, remove from skillet & serve.
