Ceasar Dressing

Ingredients

  • 1 egg yolk
  • 1 T Dijon mustard
  • 1 T red wine vinegar (or lemon juice)
  • 1 tsp crushed garlic
  • 1 tsp crushed anchovy
  • 1/2 cup olive oil
  • salt and pepper

Preparation

Step 1

1. Place yolk in a stainless steel bowl.
2. Place bowl over a pot of simmering water and whisk yolk until warm and frothy.
3. Add mustard, vinegar, garlic and anchovy - stir.
4. Gradually whisk in olive oil.
5. Season.
