Ingredients

  • 2 3/4 cups all purpose flour
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 1/2 tsp ground ginger
  • 1 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 1 cup softened butter
  • 1 egg
  • 1 cup brown sugar, packed
  • 1/4 cup molasses

Preparation

Step 1

Sift the flour. Add baking soda, cinnamon, ginger, cloves and salt. Mix well and set aside.

In a separate bowl, cream the butter. Add the egg, brown sugar and molasses. Mix to a smooth paste.

Slowly add the dry ingredients. Mix well. Refrigerate the cookie dough for one hour.

Preheat oven to 350F.

On a floured surface, roll out the dough to a thickness of 1/4 inch. Cut out the cookies in the desired shape using a cookie cutter and place them on a baking sheet lined with parchment paper.

Cook 10 to 12 minutes or until cookies are firm. Cooking time will vary with cookie thickness.

Allow to cool and decorate as desired.
