Ingredients
- 2 1/2 Cups of Mayonnaise
- 1/2 Cup chopped Parsley
- 1/2 Cup Celery – Diced
- 1/4 Cup Red Onion – Diced
- 1/4 Cup Green Onion – Diced
- 1/4 Cup Red Pepper – Diced
- 1/4 Cup Green Pepper – Diced
- 4 tsp. Prepared Mustard
- 2 tsp. White Vinegar
- 1 tsp. Salt
- 1 tsp. Pepper
- 1/2 tsp. White Sugar
- 6 – Boiled Eggs – Chopped
- 4 lbs Red Potatoes - Boil until tender – Cool completely in refrigerator and then cube
Preparation
Step 1
Combine all ingredients except potatoes. Stir well. Add potatoes and stir gently to coat. Refrigerate several hours or overnight.
