Rainbow Bean Salad

Ingredients

  • Salad:
  • one 8.5 oz. can red kidney beans, drained and rinsed
  • one 8.5 oz. can cannellini beans, drained and rinsed
  • one 8.5 oz. can garbanzo beans, drained and rinsed
  • 1/2 cup chopped red pepper
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped orange pepper
  • 1/2 cup chopped yellow pepper
  • 1/4 cup chopped red onion
  • Dressing:
  • 3 Tablespoons olive oil
  • 2 Tablespoons red wine vinegar
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/8 teaspoon salt
  • pepper to taste

Preparation

Step 1

Place beans thru onion into a large glass bowl.
Mix together the dressing ingredients and add to beans. Serve with a slotted spoon.
