Ingredients
- 1/2 c. butter
- 2/3 c. sugar
- 1/4 c. honey
- 2 eggs
- 1/2 t. salt
- 1 1/2 c. flour
- 3/4 c. cornmeal
- 1/2 t. baking powder
- 1/2 c. milk
- 3/4 c. frozen corn
Preparation
Step 1
1. Preheat oven to 400 degrees F.
2. Cream together butter, sugar, hiney, eggs and salt in a large mixer bowl.
3. Whisk together flour, cornmeal and baking powder and blend thoroughly.
4. Add try ingredients to creamed mixture then add milk while mixing.
5. Stir in corn.
6. Grease a 12-cup muffin tin and fill each cup with batter.
7. Bake 20-25 minutes til muffins begin to brown on top.
