EGGPLANT CASSEROLE

Ingredients

  • 6 T butter
  • 2 C cooked eggplant cubed
  • 1 T onion (chopped)
  • 1 tsp. salt
  • 1/4 tsp black pepper
  • 1 c milk
  • 1 c cracker crumbs
  • 1 c American cheese cubed
  • 2 eggs beaten

Preparation

Step 1

Add butter to hot egg plant. Mix until melted. Add remaining ingredients, mix well. Pour into greased casserole dish. Bake 325 until center rises about 30 minutes
